Skinny Million Dollar Chicken🍗🧀🥓

This lightened up version of million dollar chicken is low carb and lower in points and calories than the original version but still full of flavor! It is a family friendly recipe that everyone will enjoy!

How to Make This:

Ingredients:

  • 2 pounds Uncooked boneless skinless chicken breast

  • 4 oz Neufchatel Cheese (1/3 less fat cream cheese)

  • 1 1⁄2 cup Low fat Finely shredded Mexican four cheese blend

  • 3 oz Crisp cooked bacon (or about 6 pieces)

  • 1⁄2 cup Scallions, chopped

  • 2 Tbsp Hellman's Light Mayonnaise

  • cooking spray for dish

Instructions:

  1. Spray a 13X9 baking dish with cooking spray and lay your chicken breasts in. I cut my chicken breasts in half.

  2. Cut bacon into small pieces.

  3. In a medium sized bowl, mix cream cheese, mayo, most of the bacon crumbles (reserving some for garnish), most of the green onion(reserving some for garnish) and 1 cup of the shredded cheese, blend together until combined.

  4. Spread the cheese mixture over the chicken.

  5. Top with remaining cheddar cheese.

  6. Bake uncovered, at 350F, for 30-40 minutes or until chicken is cooked through (165˚F internal temperature)

  7. Garnish with additional bacon and green onions

  8. Enjoy!
