Grilled Steak Kabobs With Pioneer Woman's Beef Marinade Recipe Lightened Up

These Lightened up steak kabobs are marinated with a lightened up version of the Pioneer Woman's beef marinade. They are are perfect for summer grilling!

How to Make This:

Ingredients:

  • For the Marinade:

  • 1⁄3 cup Worcestershire sauce

  • 1⁄4 cup Olive oil

  • 1⁄3 cup Balsamic vinegar

  • 2 tsp Garlic, minced

  • 2 Tbsp Dijon mustard

  • 2 Tbsp Lakanto Brown monkfruit sweetener with erythritol

  • 1⁄2 tsp Black pepper

  • 1⁄4 tsp Red pepper flakes

  • For the rest:

  • 24 oz (1 1/2 lbs) Uncooked lean trimmed sirloin beef

  • 1 medium Red onion, chopped into chunks

  • 1 medium Red bell pepper, chopped into chunks

  • 1 medium Green bell pepper, chopped into chunks

  • 8 oz Mushroom

  • 1 cup Pineapple chunks

Instructions:

  1. For the marinade: Whisk together all ingredients together in a medium bowl.

  2. Next: cut up the steak into roughly 1 inch cubes.

  3. Add steak to a ziplock bag and pour marinade in and ensure all pieces are covered.

  4. Set bag on a plate and refrigerate for 3-6 hours or at least 1 hour.

  5. Once the meat has marinated, remove from the fridge, pour into a large bowl and add your chopped up veggies.

  6. Stir to cover veggies and let sit on the counter for 1/2 hour.

  7. Assemble your kabobs by threading the veggies and roughly 4 oz of steak, alternating as you like.

  8. Preheat the grill to medium-high heat (400 to 450°).

  9. Grill for about 4 minutes on one side and turn and continue grilling another 2 to 3 minutes more to desired degree of doneness.

  10. We do ours medium rare or 130-135 F
