Skinny Baked Eggplant Parmesan🍆🍅🧀

This lightened up version of the Italian favorite hits all the flavors with not all of the calories!

How to Make This:

Ingredients:

  • 1 1/4 cup Italian-style Seasoned breadcrumbs

  • ¼ cup Tbsp Grated Parmesan cheese

  • 2 medium Uncooked eggplant (2lbs)

  • 3 large Eggs, lightly beaten

  • 2 tablespoons water

  • 3 cups tomato sauce (I use my homemade marinara ➡️homemade marinara

  • 1 1/2 cups shredded Part skim mozzarella cheese

  • 1 tsp Dried basil

  • Salt to sweat eggplant

  • cooking spray.

Instructions:

  1. Slice eggplant into 1/4- 1/2-inch-thick slices. You can remove the skin if you want.

  2. To sweat the eggplant: Sprinkle some salt on both sides of each slice of eggplant. Layer the slices in a colander and place the colander in your sink. Set a heavy dish or pan over the top to weigh them down. Allow the eggplant to sweat for 30 to 45 minutes.

  3. Rinse the slices well with cold water to remove any excess salt and blot them dry with paper towels.

  4. Spray a 13X9 inch baking dish with cooking spray; set aside.

  5. Combine bread crumbs and Parmesan cheese in a medium-size shallow bowl; set aside.

  6. In another medium shallow bowl, add eggs and water and beat.

  7. Dip eggplant slices into egg wash, then dredge in breadcrumb mixture.

  8. Lay on baking sheet lined with parchment. Spray tops lightly with cooking spray. Bake at 425 F until softened on the inside, and golden and crisp on the outside, 30 to 35 minutes; flipping after 15 minutes.

  9. Spread ¾ cup sauce on bottom of prepared baking dish.

  10. Add a layer of eggplant, followed by 1/2 cup cheese.

  11. Top with ¾ cup sauce, followed by more eggplant, ¾ cup sauce, eggplant, remaining sauce and remaining cheese.

  12. Sprinkle with dried basil. Lower heat and Bake uncovered, at 350 F, until cheese is melted and sauce is bubbling, about 25--35 minutes.

  13. Enjoy!
