LOWER SODIUM Mississippi ChickenšŸ—Healthier Crock-Pot Mississippi Chicken

This Mississippi chicken recipe is considerably lower in sodium at less than a third of the amount that is in the original recipe. Not only that, it is also a low carb, protein packed, tasty chicken recipe that is low in WW points and calories!

How to Make This:

Ingredients:

  • 3 pounds boneless, skinless chicken breasts

  • 8 Peperoncini

  • 2 Tbsp Brummel and Brown Butter Spread (light butter spread)

  • 1 cup low sodium Beef broth- (1 tsp Better Than Bouillon Base Reduced Sodium Beef and 1 cup water)

  • 1 Tbsp Coconut aminos

  • Cooking spray

  • Homemade-ranch-seasoning-mix-recipe:

  • 2 Tbsp dried parsley

  • 1 tsp dried dill

  • 1 tsp garlic powder

  • 1 tsp onion flakes

  • 1/2 tsp dried basil

  • 1/2 tsp pepper *the recipe also says to add salt to taste. I did not for this but you can.

Instructions:

  1. Spray the crock of the slow cooker with nonstick cooking spray and place the chicken in.

  2. Pour beef broth and coconut aminos over top.

  3. Sprinkle Ranch seasonings on top.

  4. Top with butter spread and Pepperoncini peppers.

  5. Put the lid on the slow cooker and cook on low for six hours or high for four hours, or until chicken reaches an internal temperature of 165F.

  6. Transfer chicken from the slow cooker to a cutting board and shred using two forks.

  7. Remove stems from Pepperoncini.

  8. Return the shredded chicken to the slow cooker, stirring to combine with juices.

  9. Enjoy!
