SKINNY Mongolian Ground Beef Noodles

This sweet and savory lightened up Mongolian Ground Beef Noodles recipe takes less than 30 minutes to throw together. You get all the delicious flavors of take out but it is even better and it is healthier for you!

How to Make This:

Ingredients:

  • 1 pound Ground Beef

  • 2 tsp minced ginger

  • 3 cloves (1 Tbsp) minced garlic

  • 1/4 cup Lakanto golden

  • 1/2 cup beef broth

  • 1/3 cup soy sauce low sodium

  • 2 Tbsp Hoisin Sauce

  • 1 tsp sesame oil

  • 1/4 teaspoon Black Pepper

  • 1/4 teaspoon Red Pepper Flakes

  • 8 oz Rice Noodles (I use Thai Kitchen stir fry noodles)

  • 1 Tbsp Cornstarch

  • 1/2 cup Green Onions divided

  • 1 tsp Sesame Seeds optional

Instructions:

  1. To a small bowl, add the soy sauce, beef broth, Lakanto golden, hoisin sauce, cornstarch, red pepper flakes and pepper. Whisk together until cornstarch is dissolved. Set aside.

  2. Prepare the noodles based on the package instructions. Drain and rinse with cold water. Toss with sesame oil and set aside.

  3. In a large skillet, on medium heat brown the ground beef.

  4. Add the ginger and garlic. Cook until fragrant, about 2-3 minutes.

  5. Add sauce to beef and stir. lower heat to medium-low and let liquid come to a simmer.

  6. Let simmer until liquid starts to thicken, about 5 minutes or so.

  7. Once the sauce has thickened add in the cooked noodles and most of the green onions. Toss to combine the noodles with the sauce and the meat mixture.

  8. Garnish with the remaining green onions and sesame seeds.

  9. Enjoy!
