Sheet-Pan BBQ Chicken & Veggies

This easy and delicious, high protein, low point BBQ chicken and veggies sheet-pan dinner comes together in minutes!

How to Make This:

Ingredients:

  • 3 breasts (3 pounds) Uncooked boneless skinless chicken breasts

  • 1⁄3 cup Sweet Baby Ray's No sugar added sweet & spicy barbecue sauce

  • 1 Tbsp Hot sauce

  • 1 Tbsp Lakanto golden monkfruit sweetener with erythritol

  • 1 1⁄2 pounds Petite red potatoes, cut into halves

  • 1 1⁄8 Tbsp Olive oil - 1 Tbsp for potatoes, 1/8 Tbsp for broccoli

  • 1 tsp Italian seasoning

  • 1 1⁄4 tsp Granulated garlic - 1 tsp for potatoes, 1/4 tsp for broccoli

  • 1⁄2 tsp Table salt - 1/4 tsp for potatoes, 1/4 tsp for broccoli

  • 1⁄2 tsp Black pepper - 1/4 tsp for potatoes, 1/4 tsp for broccoli

  • 2-3 Crowns of Broccoli, about 4 cups, chopped

Instructions:

  1. Preheat the oven to 400F.

  2. Line a large baking sheet with parchment paper and set aside.

  3. In a small bowl, mix together the barbecue sauce with hot sauce and sweetener. Set aside.

  4. Wash and cut potatoes in halves.

  5. Add potatoes to a large bowl.

  6. Add olive oil, Italian seasoning, 1 tsp granulated garlic, 1/4 tsp salt, 1/4 tsp pepper. Toss to coat.

  7. Arrange the tossed potatoes on the baking sheet on one side.

  8. Wash and cut broccoli into florets and place on opposite side of pan.

  9. Spritz with olive oil and sprinkle with about 1/4 tsp salt, pepper and granulated garlic.

  10. Cut chicken breasts into halves and place in middle of pan.

  11. Brush the chicken with BBQ sauce.

  12. Bake for about 25-35 minutes until veggies are tender and chicken is cooked & reaches an internal temp of 165 F.

  13. Enjoy!
