QUICK and EASY Lightened Up Chicken Noodle Casserole
This recipe is one the whole family loves and it is also a great way to get my kids to eat their veggies!
How to Make This:
Ingredients:
3 cups uncooked whole wheat noodles (about 6 oz)
24 oz frozen veggies (slightly defrosted)
2 cans low fat cream of chicken soup
1 lb cooked and chopped, boneless, skinless chicken breast
1 cup fat free milk
1/2 cup fat free plain Greek yogurt
1/2 cup parmesan cheese
1 cup low fat cheddar cheese
Pepper to taste
Instructions:
Cook noodles to al dente.
While noodles are cooking, combine remaining ingredients, except for cheddar cheese.
Add in cooked noodles and put in 13X9 prepared casserole dish.
Bake at 400 for 25 minutes.
Add cheddar cheese to top and cook an additional 5 minutes until melted.
Enjoy!
