Cheesy Cauliflower Waffles

These cheesy latke-like vegetable cakes use cauliflower rice instead of potatoes, keeping them very low carb. They cook up quickly in a waffle maker that gives them a crispy texture and a wonderful caramelized flavor.

How to Make This:

Ingredients:

  • 2 cups uncooked cauliflower rice

  • 1/2 cup shredded carrot

  • 2 tsp dried parsley

  • 1-2 Tbsp green onions

  • 5 light, part-skim mozzarella sticks (I used Sargento)

  • 2 eggs, beaten

  • salt and pepper to taste

  • cooking spray

  • Ingredients for horseradish sauce:

  • 1/4 cup non fat, plain Greek yogurt

  • 2-3 tsp horseradish sauce

  • salt and pepper to taste

Instructions:

  1. Combine all ingredients together. Spray heated waffle maker with cooking spray. Add about 3/4 cup of the mixture to waffle maker and cook about 5-7 minutes. Mix all horseradish sauce ingredients together. Top waffles with horseradish sauce.

  2. Enjoy!
