Cheesy Cauliflower Waffles
These cheesy latke-like vegetable cakes use cauliflower rice instead of potatoes, keeping them very low carb. They cook up quickly in a waffle maker that gives them a crispy texture and a wonderful caramelized flavor.
How to Make This:
Ingredients:
2 cups uncooked cauliflower rice
1/2 cup shredded carrot
2 tsp dried parsley
1-2 Tbsp green onions
5 light, part-skim mozzarella sticks (I used Sargento)
2 eggs, beaten
salt and pepper to taste
cooking spray
Ingredients for horseradish sauce:
1/4 cup non fat, plain Greek yogurt
2-3 tsp horseradish sauce
salt and pepper to taste
Instructions:
Combine all ingredients together. Spray heated waffle maker with cooking spray. Add about 3/4 cup of the mixture to waffle maker and cook about 5-7 minutes. Mix all horseradish sauce ingredients together. Top waffles with horseradish sauce.
