One Pot Pantry Taco Soup
This quick and easy taco soup is not only tasty and WW friendly, it can be made entirely with things from your pantry.
How to Make This:
Ingredients:
1 can kidney beans
1 can black beans
1 can great northern beans
1 can corn
1 can fat free refried beans
2 cans diced tomatoes
2 cups chicken broth
1 Tbsp taco seasoning (I used McCormick)
1 onion, chopped (optional)
1 bunch cilantro, chopped (optional)
Instructions:
In a large pot, cook onions on medium heat until softened.
Add a little chicken broth to keep them from sticking.
Once onions are softened, add in remaining ingredients and cook on medium/low heat for about 20-30 minutes until heated and refried beans have dissolved.
Add in cilantro and cook another couple of minutes.
Enjoy!
