I tried out a new recipe this week with this spicy meatloaf. I found the recipe in the WW app but made some changes to it to make it more to our liking! It was delicious was the perfect cozy comfort food for a cool Fall day!

How to Make This:

Ingredients:

  • 1 1⁄2 pounds Uncooked 93% lean ground beef

  • 1 cup Uncooked rolled oats

  • 1 medium Onion, finely chopped

  • 6 oz, mild or spicy, diced Canned green chile peppers

  • 1 large egg

  • 1 Tbsp Chili powder

  • 2 tsp Ground cumin

  • 8 oz Canned tomato sauce, divided

  • 1 tsp minced garlic

  • 1⁄2 cup Fat free salsa

  • 1 oz Pickled jalapeno peppers

  • Cooking spray


Instructions:

  1. Spray a standard size loaf pan with cooking spray.

  2. Combine all ingredients, except half of tomato sauce, in a large mixing bowl.

  3. Place meatloaf mixture into prepared pan, pressing in and smoothing the top.

  4. Bake at 375°F for 60 minutes.

  5. Spread remaining sauce over meatloaf and jalapenos, and cook 5 minutes more.
