Mexican Egg Roll In A Bowl
I tried a new twist on one of my favorite things to make, egg roll in a bowl! I made a Mexican or Southwest version instead of my regular version and it turned out great!
How to Make This:
Ingredients:
1 lb lean ground turkey (I used 93% lean)
1 can black beans
1 can corn
1 can rotel
16-32 oz cole slaw mix
1 medium red onion, chopped
1 bunch green onions, chopped
1 bunch cilantro, chopped
2-3 tsp minced garlic
1 Tbsp Cumin, chili powder (or you can just use a Tbsp of taco seasoning) and salt pepper to taste
Instructions:
Brown turkey in a large skillet or wok, along with onion, add ground pepper.
Once turkey is browned, add garlic and cook for about a minute.
Add cumin and chili powder and mix together.
Add in beans, corn and rotel mix again then add in coleslaw.
Cook until coleslaw starts to soften then mix in cilantro and green onions.
Top with salsa and FF Greek yogurt if you wish.
