Lightened Up Tuna Noodle Casserole
This recipe for Tuna Noodle Casserole is a lightened up version of the traditional, that is Weight Watchers friendly! It is easy, delicious and comes together quickly.
How to Make This:
Ingredients:
8 oz canned chunk light tuna in water, drained
16 oz whole-wheat noodles
1 cup frozen peas
3/4 cup reduced fat Parmesan cheese
3/4 cup reduced fat cheddar cheese, shredded (I used the WW brand)
8 oz mushrooms, sliced
1 medium onion, chopped
1/2 cup dry wine
2 Tbs reduced sodium soy sauce
2 cups nonfat milk
1/2 cup fat free sour cream(or greek yogurt)
ground pepper to taste
Instructions:
Cook egg noodles, drain and set aside.
Spray large ovenproof skillet with nonfat cooking spray and set over medium-high heat.
Add onion, mushrooms and cook, stirring often until the onion is softened, about 5 minutes.
Add wine and cook until evaporated, 4 to 5 minutes.
Add milk, soy sauce and pepper and bring to a simmer, stirring constantly.
Stir in tuna, peas and 1/2 cup parmesan and 1/2 cup cheddar cheese and sour cream until evenly incorporated.
Stir in the noodles.
Remove from heat.
Sprinkle the casserole with the remaining cheese.
Bake, covered at 350 for about 20-25 minutes until cheese is melted on top.
