Lightened Up Tuna Noodle Casserole

This recipe for Tuna Noodle Casserole is a lightened up version of the traditional, that is Weight Watchers friendly! It is easy, delicious and comes together quickly.

How to Make This:

Ingredients:

  • 8 oz canned chunk light tuna in water, drained

  • 16 oz whole-wheat noodles

  • 1 cup frozen peas

  • 3/4 cup reduced fat Parmesan cheese

  • 3/4 cup reduced fat cheddar cheese, shredded (I used the WW brand)

  • 8 oz mushrooms, sliced

  • 1 medium onion, chopped

  • 1/2 cup dry wine

  • 2 Tbs reduced sodium soy sauce

  • 2 cups nonfat milk

  • 1/2 cup fat free sour cream(or greek yogurt)

  • ground pepper to taste

Instructions:

  1. Cook egg noodles, drain and set aside.

  2. Spray large ovenproof skillet with nonfat cooking spray and set over medium-high heat.

  3. Add onion, mushrooms and cook, stirring often until the onion is softened, about 5 minutes.

  4. Add wine and cook until evaporated, 4 to 5 minutes.

  5. Add milk, soy sauce and pepper and bring to a simmer, stirring constantly.

  6. Stir in tuna, peas and 1/2 cup parmesan and 1/2 cup cheddar cheese and sour cream until evenly incorporated.

  7. Stir in the noodles.

  8. Remove from heat.

  9. Sprinkle the casserole with the remaining cheese.

  10. Bake, covered at 350 for about 20-25 minutes until cheese is melted on top.

  11. Enjoy!
