Lightened Up Shepherd's Pie

I show how I make my Weight watchers version of Shepherd's Pie. I Love Shepherd's Pie but I don't love all of the calories. This lightened up version is a delicious alternative that is full of flavor and comes together in minutes! This is comfort food that makes a great meal on a cool Fall night!

How to Make This:

Ingredients:

  • 1 pound lean ground turkey

  • 2 cups chicken broth (fat free)

  • 1/4 cup fat free sour cream ( I now use fat free Greek yogurt)

  • 1 Tbsp light margarine

  • 1 large red onion, chopped

  • 2 large potatoes chopped

  • 12 ounce bag of frozen mixed veggies

  • 3 Tbsp flour

  • 1 tsp rosemary

  • 1 tsp thyme

  • salt and pepper to taste

Instructions:

  1. Steam potatoes until fork tender.

  2. Cook on medium high heat the onions and turkey until turkey is browned and onions are softened.

  3. Add in seasoning and flour and stir.

  4. Add chicken broth and turn up heat until mixture starts to simmer.

  5. Let simmer until liquid thickens up.

  6. Once liquid has thickened, turn down heat and add veggies and stir well.

  7. When potatoes are fork tender, drain and add sour cream, margarine salt and pepper and mash until nice and smooth.

  8. Pour meat mixture into a 9X9 dish.

  9. Add mashed potatoes to the top, smoothing them over the meat mixture.

  10. Bake at 350 F, uncovered, for about 30 minutes.

  11. Enjoy!
