Crockpot Chicken Mushroom and Rice Casserole

This Crockpot Chicken Mushroom and Rice Casserole is a Weight Watchers recipe that is absolutely delicious and easy!

How to Make This:

Ingredients:

  • 2 large, uncooked boneless skinless chicken breasts(about 26-32 oz)

  • 2 cups chicken broth

  • 3/4 cup uncooked brown rice

  • 1 cup chopped carrots

  • 1/2 pound sliced mushrooms

  • 3 stalks celery

  • 1 medium onion, chopped

  • 1 tsp Dijon mustard

  • 2 tsp mined garlic

  • 2 tsp worchestire sauce

  • 1 tsp sage

  • ground pepper to taste

Instructions:

  1. Pour chicken broth in crockpot.

  2. Add remaining ingredients, except chicken.

  3. Stir and nestle chicken on top.

  4. Cook on low for around 5-7 hours or until the chicken reaches an internal temperature of 165.

  5. Shred chicken and mix in.

  6. Enjoy!
