One Skillet Spicy Chicken & Broccoli with Rice
This recipe for One Skillet Spicy Chicken and Broccoli is an Asian inspired Weight Watchers favorite of mine. It is full of delicious flavors and colorful veggies making it not only delicious but healthy! The spicy ginger and sweet orange in this dish are an amazing combination of flavors. Eat it alone or put on brown rice for a delicious, healthy and filling meal!
How to Make This:
Ingredients:
16 oz Cooked skinless boneless chicken breasts, chopped
1 medium Bell pepper
1 medium bunch green onions, chopped
3 tsp Minced garlic
1 Tbsp Ginger root, finely diced
1⁄2 cup Fat free chicken broth
1⁄4 cup Fresh orange juice
3 Tbsp Low sodium soy sauce
2 cups Uncooked broccoli, chopped, you can also use frozen
2 medium Mandarin oranges, segmented and chopped
2 tsp Cornstarch
1⁄4 cup, plus 2 Tbsp Water, divided
2 cups cooked brown rice
Instructions:
Heat wok or skillet to medium-high heat, add 1/4 cup water, broccoli and bell pepper to skillet, cover and cook for a couple minutes until broccoli is crisp-tender.
In a small bowl, stir together 2 Tbsp of water and cornstarch until smooth, set aside.
Add green onions, ginger, and garlic to broccoli and peppers and cook about 1 minute.
Add chopped chicken, chicken broth, orange juice, soy sauce and cornstarch mixture, to skillet.
Cook until sauce bubbles and thickens. Stir in oranges and serve over rice.
