Healthier LOWER SODIUM Mississippi Pot Roast🥘Crock-Pot Mississippi Pot Roast

This healthier, low sodium version of the classic Mississippi Pot Roast still has all the wonderful flavors without all the sodium and additives! It uses homemade low sodium ranch seasonings. Its done in the crockpot, making this not only delicious but super simple to make! Not only that, it is also a low carb, protein packed, tasty beef recipe that is low in WW points at only 1 Pt per serving!

How to Make This:

Ingredients:

  • 3 lb round roast, trimmed

  • 8 Pepperoncini

  • 2 Tbsp Brummel and Brown Butter Spread (light butter spread)

  • 1 cup low sodium Beef broth- (1 tsp Better Than Bouillon Base Reduced Sodium Beef and 1 cup water)

  • 1 Tbsp Coconut aminos

  • 3 cloves minced garlic

  • Cooking spray

  • Homemade-ranch-seasoning-mix-recipe:

  • 2 Tbsp dried parsley

  • 1 tsp dried dill

  • 2 tsp granulated garlic

  • 1 tsp onion powder

  • 1 tsp dried minced onion

  • 1/2 tsp dried basil

  • 1/2 tsp pepper

  • 1.5 tsp kosher salt

Instructions:

  1. Spray slow cooker with cooking spray.

  2. Place roast in slow cooker.

  3. Pour beef broth over top.

  4. Add minced garlic and butter spread.

  5. Sprinkle all seasonings on top of the meat.

  6. Place the pepperocini peppers on and around the beef.

  7. Cover and cook on low for 6- 8 hours (or high for 4-5 hours).

  8. Transfer beef from the slow cooker to a cutting board and shred. I used meat claws but two forks work well.

  9. Remove stems from Pepperoncini.

  10. Return the shredded beef to the slow cooker, stirring to combine with juices.

  11. Serve by itself or with rice, mashed potatoes or cauliflower mash

  12. Enjoy!
