Lightened Up Peanut Butter Chicken π₯π
This Skinny version of Peanut Butter Chicken packs all the flavor without all the calories!
How to Make This:
Ingredients:
2 lbs boneless skinless chicken breast
3 Tbsp cornstarch
ΒΌ cup Pbfit peanut butter powder
Β½ cup water plus 3 Tbsp, divided
ΒΌ cup Hoisin sauce
3 Tbsp soy sauce
1 tsp sesame oil
1 tsp minced garlic
1 Tbsp olive oil
1 tsp sesame seeds
ΒΌ cup green onions
Instructions:
Chop chicken into roughly 1 inch cubes. Add to bag or bowl. Add in cornstarch and shake or toss until coated.
Mix peanut butter powder with 3 Tbsp water together.
In a medium bowl, add in the peanut butter, hoisin sauce, soy sauce, sesame oil, minced garlic, and Β½ cup water and stir to combine.
Add the oil into a non-stick pan and heat on medium heat. Once hot, add the chicken and cook for 5-6 minutes or until it reaches an internal temp of 165F.
Add the sauce and stir until the chicken is coated.
Cook for additional 8-10 minutes, on medium heat, until the sauce has thickened.
Remove the pan from the heat and sprinkle with sesame seeds and green onions before serving.
