Fiesta Chicken Casserole

Cheesy fiesta chicken casserole! This one is packed full of flavor but not a lot of calories!

How to Make This:

Ingredients:

  • 2 cups Kroger Reduced fat 4 cheese Mexican blend finely shredded cheese

  • 2 1⁄2 cups Cooked skinless boneless chicken breast, chopped

  • 15 oz No-salt-added canned drained black beans, rinsed

  • 15oz Canned yellow corn, drained

  • 1 cup Plain fat free Greek yogurt

  • 10 oz Rotel Mild Diced Tomatoes & Green Chilies

  • 2 Tbsp Taco seasoning mix

  • 1⁄2 tsp Ground cumin

  • 1 tsp Granulated garlic

  • 2 1⁄2 cups Whole wheat rotini, uncooked(8oz)

Instructions:

  1. Cook pasta, to al dente, according to package directions.

  2. While pasta is cooking, in a large bowl, combine Greek yogurt, Rotel, taco seasoning, cumin, granulated garlic.

  3. Stir in drained pasta until coated.

  4. Add in the corn, black beans, chicken, and 1 cup of the shredded cheese.

  5. Stir together to combine.

  6. Pour into 13X9 baking dish and sprinkle the remaining cheese on top.

  7. Cover with tin foil and cook for 20 minutes, at 350F.

  8. Take the tin foil off and let cook an additional 5 minutes.

  9. Enjoy!
