EASY Chicken Enchiladas
This Weight Watchers Friendly recipe for Chicken Enchiladas is so good, no one would believe it is Weight Watchers! I have made this recipe ever since I first started doing done Weight Watchers years ago and it has remained in my meal rotation because it is so good and so easy!
How to Make This:
Ingredients:
2 skinless, boneless chicken breasts, cooked and chopped up (about 20 oz)
2 cups low fat shredded cheese
2 cups salsa
1 can fat free refried beans 28 oz can enchilada sauce (I used the green)
24 corn tortillas
Instructions:
Mix chicken, cheese, salsa, refried beans together.
Pour half of enchilada sauce in two 13X9 greased pans, set aside other half.
Put about two Tbs. of chicken mixture in each tortilla shell and roll up.
Place seam side down in pan.
Pour remainder of enchilada sauce over the top of the enchiladas.
Cover with foil and Cook for 30 minutes at 350
