Easy One Skillet Mexican Quinoa
This Easy One Skillet Mexican Quinoa is a delicious quinoa recipe. It is easy and quick to make!
Ingredients:
1 lb ground beef (I now use ground turkey, 93% lean)
1 cup quinoa, rinsed and drained
2 1/2 cups chicken broth
1 can black beans, rinsed
1 can corn, drained
1 can diced tomatoes
1 bell pepper, chopped
1 medium onion, chopped
1 1/2 Tbsp jalapeno, chopped
2 tsp minced garlic
1 Tbsp chili powder
tsp cumin
**2 Tbsp oil ( I no longer use oil)
pepper to taste
Instructions:
In a large skillet, on medium high heat and cook meat and onion until meat is browned and onions are translucent. Salt and pepper to taste.
Add garlic and cook for about a minute.
Add the rest of the ingredients, stir and let come to a boil.
Once it comes to a boil, turn heat to low and let simmer for about 20 minutes or until the quinoa has absorbed the moisture and is cooked.
Top with Greek yogurt/sour cream and avocado!
