This Easy One Skillet Mexican Quinoa is a delicious quinoa recipe. It is easy and quick to make!

Ingredients:

  • 1 lb ground beef (I now use ground turkey, 93% lean)

  • 1 cup quinoa, rinsed and drained

  • 2 1/2 cups chicken broth

  • 1 can black beans, rinsed

  • 1 can corn, drained

  • 1 can diced tomatoes

  • 1 bell pepper, chopped

  • 1 medium onion, chopped

  • 1 1/2 Tbsp jalapeno, chopped

  • 2 tsp minced garlic

  • 1 Tbsp chili powder

  • tsp cumin

  • **2 Tbsp oil ( I no longer use oil)

  • pepper to taste



Instructions:

  1. In a large skillet, on medium high heat and cook meat and onion until meat is browned and onions are translucent. Salt and pepper to taste.

  2. Add garlic and cook for about a minute.

  3. Add the rest of the ingredients, stir and let come to a boil.

  4. Once it comes to a boil, turn heat to low and let simmer for about 20 minutes or until the quinoa has absorbed the moisture and is cooked.

  5. Top with Greek yogurt/sour cream and avocado!
