Diner-Style Meatloaf
I found this recipe on the WW website and had to try it out (with some changes)! It was moist, delicious and full of flavor!
How to Make This:
Ingredients:
1 medium onion, finely chopped
1 medium red pepper, finely chopped
2 pounds 93% lean ground turkey
1⁄2 cup Seasoned breadcrumbs
1 large Egg white
2 Tbsp Mustard
1 tsp Worcestershire sauce
1 tsp Garlic powder
1⁄4 tsp Table salt
1 cup (divided) Heinz No sugar added tomato ketchup
1⁄4 tsp, freshly ground Black pepper

Instructions:
In a large nonstick skillet cook the onion and bell pepper, until softened, about 5 minutes.
Remove from the heat and let cool 10 minutes.
Spray a loaf pan with cooking spray, place on a cookie sheet and set aside.
In a large bowl, add in turkey, cooled onion and peppers, bread crumbs, egg white, mustard, 1/2 cup of the ketchup, Worcestershire sauce, garlic powder, salt and black pepper and mix together well.
Press mixture into prepared loaf pan and spread the remaining 1/2 cup ketchup over the top of the meat loaf.
Bake at 400 until a thermometer inserted into the center of the meatloaf registers 165ºF, about 45 minutes.
Remove from the oven and let stand 10 minutes before slicing.
