Baked Broccoli Mac and Cheese

An easy cheesy baked mac and cheese that the whole family will love!

How to Make This:

Ingredients:

  • 12 oz whole wheat macaroni noodles( I didn't have macaroni so I used rotini)

  • 1/4 cup seasoned bread crumbs

  • 1/4 cup flour 2 cups shredded ,low fat cheddar cheese (I used the reduced fat 4 cheese Kroger Mexican style)

  • 1 1/2 Tablespoons butter spread (I like Brummel and Brown)

  • 1/8 cup parmesan cheese

  • 1 small onion chopped

  • 16 oz broccoli, fresh or frozen

  • 1 cup chicken broth

  • 2 cups skim milk

  • 1 tsp minced garlic

  • 1 tsp dijon mustard

  • salt and pepper to taste

Instructions:

  1. Bring a large pot to boil and cook pasta and broccoli together until pasta is Al dente.

  2. Heat a large pan on low heat and add butter.

  3. Once butter is melted, add onions and cook about a minute.

  4. Add in garlic and cook a minute more.

  5. Add flour and cook until slightly browned.

  6. Add in broth and milk and stir well.

  7. Turn up heat to med/high and bring mixture to a boil.

  8. Stir and cook about 5 minutes until mixture is thickened.

  9. Once thickened, remove from heat and mix in cheese, mustard, pepper (and salt if you want) to taste.

  10. Stir in drained pasta and broccoli.

  11. Pour into 9X9 casserole dish, sprayed with cooking spray.

  12. Top with bread crumbs and parmesan cheese and bake at 375 for about 20 minutes.

  13. Enjoy!
