Crock Pot Sausage and Potato Soup
This quick and easy Crock Pot Potato soup perfect for a cold winter day when you are looking for a hearty comfort food that isn't high in points!
How to Make This:
Ingredients:
1 1/2 pounds of chopped potatoes (about 4 medium sized potatoes)
13 oz turkey sausage ( I used turkey polska kielbasa)
1 onion, chopped
1 Tbsp minced garlic
3 cups fat free chicken broth
12 oz frozen corn
2 cups skim milk
2 Tbsp cornstarch
1 1/2 cup low fat cheese
1 cup fat free Greek yogurt Salt and pepper to taste
Instructions:
Chop the sausage into bite sized pieces.
Cook with the onion in a large pan until sausage is slightly browned and onion is softened.
Add in garlic and cook another minute or until fragrant.
Add to crockpot along with potatoes, chicken broth and corn.
Stir and cook on low for 4 to 6 hours or until potatoes are softened.
When potatoes are softened, stir milk and cornstarch together and stir into soup.
Cover and continue to cook on low for another 30-40 minutes or until the soup has thickened slightly.
Add in cheese and Greek yogurt and stir until cheese is melted.
