Cheesy Chicken and Broccoli Quinoa

This Healthy Cheesy Chicken Broccoli Quinoa recipe is so easy to make and absolutely delicious. It takes just a few ingredients and comes together very quickly.

How to Make This:

Ingredients:

  • 14 oz frozen(or fresh) broccoli

  • 1 cup dry quinoa, cooked

  • 2 cups diced, cooked chicken

  • 1 1/2 cup shredded cheddar cheese I use a 40% less fat cheese

  • 2 cups almond milk

  • 1/3 cup greek yogurt or fat free sour cream

  • 2 Tbsp flour

  • 3 Tbsp butter light butter spread, I use Brummel and Brown spread made with yogurt

Instructions:

  1. Steam broccoli and set aside.

  2. Melt butter in large pan on medium heat.

  3. Once melted, whisk in flour and cook for about a minute.

  4. Add milk and whisk well, continuing to cook on medium heat until it starts to thicken.

  5. Once thickened, add in quinoa, chicken and broccoli, stir well.

  6. Add in greek yogurt and about

  7. 1 cup of the cheese.

  8. Add pepper and salt to taste.

  9. Pour in a prepared casserole dish, top with remaining cheese and bake at 350 for about 20 minutes.
