Copycat Panera Bread Tomato Soup-Lightened Up🍅🍲

This lightened up copycat version of Panera's Tomato Soup was a viewer request. It was a nice warm, cozy soup for a cold winter day!

How to Make This:

Ingredients:

  • 56 oz Cento Tomatoes, Peeled

  • 1 cup Vegetable broth

  • 1 Tbsp Olive oil

  • 4 tsp Jarred minced garlic

  • 1 large yellow Onion

  • 1 Tbsp Lakanto Classic Monkfruit Sweetener With Erythritol

  • 8 fresh Basil leaves

  • 1⁄4 tsp Dried oregano

  • 1⁄4 tsp Red pepper flakes

  • 1⁄4 tsp Black pepper

  • 1⁄4 tsp Kosher salt

  • 1⁄4 cup Plain fat free Greek yogurt

  • 1⁄4 cup Light cream cheese

  • 1⁄4 cup Plain unsweetened almond milk

Instructions:

  1. First, wash your basil and set aside.

  2. Slice your onion up. In a large pot, on medium heat, add in olive oil and heat.

  3. Add in your sliced onions and cook until softened and slightly browned.

  4. Add in garlic and cook another minute.

  5. In a blender or food processor, add in your tomatoes, broth, basil leaves, Lakanto classic, oregano, salt, black pepper, and crushed red pepper.

  6. Blend until smooth.

  7. Add the cooked onions in and blend again until smooth. (You may have to pour some of your tomato mixture into your pot to make room for your onions depending on the size of your blender or food processor).

  8. Once blended, pour your soup in the pot and return the heat to medium.

  9. Stir and let it cook until it is heated through and comes to a simmer. This will take about 10 minutes.

  10. Turn the heat down to low and let sit for about 5 minutes to cool slightly.

  11. Remove about 1/2 cup of soup and put into a small container.

  12. Whisk in milk, yogurt and cream cheese to temper.

  13. Add back into the pot and whisk it in.

  14. Continue to whisk, on low heat, until any remaining cream cheese pieces are melted in.

  15. This takes about 5 minutes.

  16. Garnish with croutons and fresh basil leaves for additional points, if you wish.

  17. Enjoy!
