Chicken Tater Tot Casserole

A lightened up, chicken twist on the classic comfort food tater tot casserole. This one is easy and kiddo friendly!

How to Make This:

Ingredients:

  • 10 3⁄4 fl oz Campbell's Condensed Soup 98% Fat free cream of chicken

  • 1⁄2 cup Fat free skim milk 1

  • ⁄3 cup Plain fat free Greek yogurt

  • 16 oz tater tots, I used Season's Choice Potato puffs

  • 15 1⁄2 oz Cut green beans, canned

  • 1 pound Cooked skinless boneless chicken breast

  • 1 cup Reduced fat 4 cheese Mexican blend finely shredded cheese, I used Kroger brand

  • 1 medium Uncooked onion, chopped

  • 2 tsp Minced garlic

  • ground black pepper to taste

Instructions:

  1. In a large skillet on medium heat, add in onions, pepper and cook onions until soft.

  2. Add in garlic and cook an additional couple of minutes.

  3. Stir in chicken, soup, milk, green beans, Greek yogurt, 1/2 of the cheese and black pepper to taste.

  4. Pour in a 13X9 casserole dish and smooth out.

  5. Top with tater tots and remaining cheese.

  6. Bake at 350 for 30-35 minutes.

  7. Enjoy!
