Cheesy Broccoli and Rice Stuffed Peppers

Easy, cheesy, meatless stuffed peppers!

How to Make This:

Ingredients:

  • 4 medium Uncooked bell peppers

  • 1 Tbsp light butter spread (I used Brummel & Brown Spread Made with Yogurt)

  • 1 small Uncooked onion, chopped

  • 3 medium Garlic cloves, minced

  • 1 cup Uncooked long grain brown rice

  • 3 1⁄2 cups chicken broth

  • 8 oz Canned diced green chiles

  • 2 oz 1/3 less fat than regular cream cheese

  • 3 cups, chopped Uncooked broccoli

  • 1 tsp Table salt

  • 1⁄2 tsp Smoked paprika

  • 1 1/2 cups Kroger Reduced fat 4 cheese Mexican blend finely shredded cheese, divided

Instructions:

  1. Cut your peppers lengthwise and remove all seeds.

  2. Bring a large pot of water to a boil and add peppers in and allow them to cook for 3-5 minutes.

  3. Remove and place them on towel to drain.

  4. In a medium pot on medium heat, add the butter, onions and garlic.

  5. Sauté the onions for a couple of minutes until they start to soften. Then stir in the rice, 3 cups broth, Green Chiles, salt, and smoked paprika.

  6. Stir and put a lid on the pot and bring to a boil.

  7. Allow the rice to cook for 25-30 minutes covered, until steam holes are evident on the surface and the broth has been absorbed by the rice.

  8. Stir in the broccoli, cream cheese, 1 cup shredded cheese, and remaining 1/2 cup broth into the rice.

  9. Stir until the cream cheese melts into the mixture.

  10. Spray a 9 X 13 inch baking dish with nonstick cooking spray.

  11. Lay the peppers in the baking dish, cut side up.

  12. Spoon the rice mixture into the bell peppers.

  13. Bake for 15-20 minutes.

  14. Then top the peppers with the remaining shredded cheese and place back in the oven for 3-5 minutes, or until the cheese is melted.

  15. Enjoy!
