Broccoli and Feta Pasta
This WW recipe for Broccoli and Feta Pasta is one of my go to pasta recipes for summer time. It is a light and fresh pasta dish with a bright flavor from the lemon zest and red pepper flakes.
How to Make This:
Ingredients:
1/2 pound uncooked whole wheat spaghetti
4 tsp olive oil
3 garlic cloves, diced
2-3 cups broccoli florets
grated zest of one lemon
1/2 tsp salt or to taste
1/2 tsp red pepper flakes or to taste
1/3 cup crumbled reduced-fat feta
Instructions:
Cook pasta according to package.
While pasta is cooking, heat olive oil in large pan and cook garlic for about a minute.
Add in broccoli and cook about five minutes or until slightly softened.
Add cooked pasta (reserve some pasta water) and remaining ingredients to a bowl and mix together. If desired, add some pasta water to moisten.
