Broccoli and Feta Pasta

Ingredients:

  • 1/2 pound uncooked whole wheat spaghetti

  • 4 tsp olive oil

  • 3 garlic cloves, diced

  • 2-3 cups broccoli florets

  • grated zest of one lemon

  • 1/2 tsp salt or to taste

  • 1/2 tsp red pepper flakes or to taste

  • 1/3 cup crumbled reduced-fat feta

Instructions:

  1. Cook pasta according to package.

  2. While pasta is cooking, heat olive oil in large pan and cook garlic for about a minute.

  3. Add in broccoli and cook about five minutes or until slightly softened.

  4. Add cooked pasta (reserve some pasta water) and remaining ingredients to a bowl and mix together. If desired, add some pasta water to moisten.

  5. Enjoy!
