This Weight Watchers recipe for Tex Mex-Style Baked beans is a delicious, easy side for any BBQ or grilling you are doing. They have a ton of flavor for not a ton of points!

How to Make This:

Ingredients:

  • 2 15oz cans great northern beans, rinsed and drained

  • 1 14oz can fire roasted diced tomatoes

  • 1 14 oz can or 1 3/4 cups chicken or vegetable broth

  • 1/4 cup strongly brewed coffee

  • 1/4 cup apple cider vinegar

  • 1 onion, chopped

  • 1/4 cup brown sugar (dark brown is best)

  • 1 tsp dry mustard

  • 1/2 tsp red pepper flakes or to taste

  • 1/4 cup reduced fat cheddar cheese

Instructions:

  1. Mix all ingredients together except for cheese and bake, covered, at 350 for 2 plus hours or until sauce thickens. Serve topped with 1 Tbsp cheese.

  2. Enjoy!
