Strawberry Icebox Cake

Light and refreshing strawberry icebox cake, perfect for summer!

How to Make This:

Ingredients:

  • 1 cup Plain fat free Greek yogurt

  • 3 oz Philadelphia Cream Cheese, 1/3 Less Fat

  • 1⁄2 tsp Vanilla extract

  • 4 oz Kroger Fat free whipped topping

  • 12 squares, 6 full sheets Reduced-fat cinnamon graham crackers

  • 2 3⁄4 cups sliced, fresh Strawberries

  • 1 tsp Lemon zest

  • 1 tsp Fresh lemon juice

  • 4 tsp Swerve The ultimate sugar replacement, confectioners


Instructions:

  1. In a mixer, beat the yogurt, cream cheese, and Swerve until fluffy, about 3 minutes.

  2. Mix in the lemon zest and vanilla.

  3. Gently fold in the whipped topping.

  4. Line a standard loaf pan with a long sheet of parchment paper, making sure it hangs over pan by a few inches to use as handles. then lay a single layer of graham crackers. spread 1/2 of the yogurt mixture, then 1/2 strawberries.

  5. Repeat with another layer of graham crackers filling and strawberries.

  6. Cover with plastic wrap and refrigerate for at least four hours or overnight until the graham crackers have softened and become cakelike.

  7. To serve, remove from pan by pulling up on parchment paper "handles".

  8. Enjoy!
