Fresh Strawberry Bread

Sweet and moist bread made with fresh strawberries!

How to Make This:

Ingredients:

  • 2 cups All-purpose flour

  • 2 tsp Baking powder

  • 1⁄2 tsp salt

  • 3⁄4 cup Lakanto Monkfruit sweetener with erythritol, classic (you can us more if you like a sweeter bread)

  • 1 large Egg

  • 1⁄4 cup Canola oil

  • 1⁄4 cup No sugar added natural applesauce

  • 3⁄4 cup Plain unsweetened almond milk

  • 2 tsp Fresh lemon juice

  • 1 tsp Vanilla extract

  • 2 cups fresh Strawberries

  • 1 tsp Lemon zest

  • cooking spray


Instructions:

  1. In a medium bowl, mix together the flour, baking powder, and salt.

  2. In a large bowl, whisk together the egg, monkfruit, oil, applesauce, almond milk, lemon juice and vanilla.

  3. Pour the dry ingredients into the wet ingredients and mix until just combined and moistened. Be careful not to overmix.

  4. Carefully fold in the chopped strawberries and stir just until combined and strawberries are evenly distributed.

  5. Spray a 9 x 5 loaf pan with cooking spray.

  6. Pour the batter into a prepared 9x5 loaf pan and bake at 350 for about 50-60 minutes, or until a toothpick inserted in the center of the loaf comes out clean.

  7. Let sit for a few minutes (about 10) then remove and cool on a wire rack.

  8. Enjoy!
