SKINNY Crustless Pumpkin Pie Crisp🎃🥧

This delicious pie is a twist on traditional pumpkin pie with the addition of a sweet, buttery, crisp topping. It makes a perfect Fall or Thanksgiving dessert!!

How to Make This:

Ingredients:

Pumpkin filling:

  • 1(15 ounce) can pumpkin

  • 1(12 ounce) can evaporated skim milk

  • 3 eggs

  • 1⁄2 teaspoon salt

  • 2 tsp pumpkin pie spice (Homemade pumpkin Spice Recipe)

  • 2 teaspoon vanilla

  • ⅓ cup Lakanto monkfruit golden

  • ⅓ cup Lakanto monkfruit classic

    Crisp Topping:

  • 1/2 cup Lakanto monkfruit golden

  • 1/2 cup Lakanto monkfruit classic

  • ¾ cup flour

  • ¾ cup rolled oats

  • 1/3 cup butter spread (I use Brummel and Brown)

  • ½ tsp pumpkin pie spice

  • ¼ tsp salt

Instructions:

  1. Preheat oven to 350° F

  2. In a large mixing bowl combine, eggs, ⅓ cup Lakanto monkfruit golden, ⅓ cup Lakanto monkfruit classic, pumpkin puree, pumpkin pie spice, vanilla extract, and evaporated skim milk. Stir until well combined.

  3. Pour the pumpkin mixture to the bottom of a 4 cup or larger pie dish.

  4. Bake in preheated oven at 350F for 35 minutes.

  5. While pie is baking, make your topping.

  6. In a medium bowl, add oats, flour, ½ tsp pumpkin pie spice, ½ Lakanto monkfruit golden, ½ cup Lakanto monkfruit classic and butter spread in a separate bowl.

  7. Using your hands blend the mixture until it forms moist clumps.

  8. Remove pumpkin filling from oven.

  9. Sprinkle topping over the top of the pumpkin filing.

  10. Bake an additional 20-25 minutes at 350F or until the topping is browned and the middle of the pie is no longer jiggly. Baking times will vary depending on bakeware, oven, elevation, etc.

  11. Let pie cool for 10-15 minutes before serving.

  12. Enjoy!
