SKINNY Lemon Cream Cheese Loaf Cake🍋🍰
This easy to make, moist and soft lemon cake is bursting with fresh citrus with a rich cream cheese swirl. It is a perfect dessert for spring or summer!
How to Make This:
Ingredients:
1 1⁄2 cups All-purpose flour
1 1⁄2 tsp Baking powder
1⁄4 tsp Baking soda
1⁄4 tsp salt
1⁄2 cup Lakanto Classic monk fruit sweetener with allulose (or no calorie sweetener of choice)
3 large Eggs
1 cup Plain fat free Greek yogurt plus 2 Tbsp- divided
1 Tbsp coconut oil, melted
1⁄2 cup Unsweetened applesauce
2 tsp Vanilla extract- divided
about 1 Tbsp Lemon zest, zest from 1 large lemon
2 Tbsp Fresh lemon juice
1/2 cup Lakanto powdered confectioners (or no calorie sweetener of choice)

Instructions:
Preheat oven to 350°F.
Zest and juice your lemon.
In a medium bowl, add the flour, baking powder, baking soda, and salt, stir until combined.
In a large mixing bowl or mixer, add the eggs, Lakanto classic, and 1 cup Greek yogurt, mix until smooth.
Add coconut oil and applesauce and mix again.
Add the lemon zest, 2 Tbsp lemon juice, and vanilla extract then mix again.
Slowly mix dry ingredients into moist ingredients, and mix until just combined, don't overmix. Some lumps may still remain.
In a medium bowl or mixer, beat cream cheese until smooth. Add in Lakanto powdered and beat until well combined. Add 2 Tbsp Greek yogurt and 1 tsp vanilla and mix until combined.
Spray a 8.5X4.5 or 9X5 inch loaf pan with cooking spray and lay a piece of parchment paper in it and spray the parchment.
Pour half of the batter into the prepared loaf pan.
Add half of the cream cheese mixture. Take a butter knife and gently swirl in the cream cheese mixture.
Pour in the remaining batter followed by the other half of the cream cheese mixture. Gently swirl in the cream cheese with the butter knife.
Bake 350°F for 50-60 minutes, or until a toothpick comes out with only a few crumbs. Allow the cake to cool about 30 minutes before serving.
