Skinny Cranberry Sauce Muffins
These Lightened Up WW friendly muffins are a great way to use up Thanksgiving or Christmas dinner cranberry sauce leftovers!
How to Make This:
Ingredients:
1 1⁄2 cup All-purpose flour
1 cup Uncooked old fashioned rolled oats
1 tsp Baking soda
1 tsp Baking powder
1⁄2 tsp Table salt
1 tsp Apple pie spice
1⁄2 cup Unsweetened vanilla almond milk
1⁄3 cup Plain fat free Greek yogurt
1⁄2 cup Unsweetened applesauce
3⁄4 cup Cranberry sauce
1⁄3 cup Lakanto Monkfruit sweetener with erythritol, golden
2 large Eggs
1⁄4 cup Chopped pecans
Instructions:
In a medium bowl, add in flour, oatmeal, powder, baking soda, salt and apple pie spice and mix together well.
In a large bowl, add milk, eggs, apple sauce, Greek yogurt, brown sugar alternative and cranberry sauce, and mix together until full incorporated.
Stir in dry ingredients just until no more dry ingredients are visible.
Spoon batter evenly into the prepared muffin cups.
Sprinkle with chopped pecans.
Bake in the preheated oven at 350 F for 18-22 minutes or until tops spring back when lightly pressed and muffins are slightly browned.
Cool for 10 minutes before removing from muffin tin and placing on a wire rack to cool completely.
