Festive Christmas Bread -Lightened UpπŸŽ„

I tried out new recipe for a Christmas quick bread, altering it, to make it a skinny version, lower in WW points and calories. I added a light cream cheese icing to it, which paired great with the lightly sweet, almond flavored bread. The holiday sprinkles in the bread and on top of the icing make this festive bread a perfect Christmas treat!

How to Make This:

Ingredients:

  • 1 3⁄4 cup All-purpose flour

  • 1 tsp Baking powder

  • 1⁄4 tsp Baking soda

  • 1 tsp Table salt

  • 1⁄2 tsp Ground cinnamon

  • 3 1⁄2 oz Wilton Sprinkles, Rainbow Jimmies - 1/2 cup for bread plus 1 Tbsp for topping

  • 3⁄4 cup Lakanto Classic Monkfruit Sweetener With Erythritol

  • 1⁄2 cup Unsweetened applesauce

  • 3 1⁄2 tsp Almond extract

  • 3 large Eggs

  • 1⁄2 cup Plain fat free Greek yogurt, plus 2 Tbsp for icing

  • 1⁄4 cup Unsweetened vanilla almond milk

  • 4 Tbsp Brummel & Brown Spread Made with Yogurt

  • 1⁄4 cup Light cream cheese

  • 1⁄2 cup Lakanto Monkfruit Sweetener, powdered

Instructions:

  1. In a medium bowl, add in flour, baking powder, baking soda, salt and cinnamon. Mix well.

  2. Add sweetener and butter spread to mixing bowl and cream together.

  3. Add in eggs, milk, granulated sweetener, applesauce, 1/2 cup Greek yogurt, 2 1/2 tsp almond extract and mix until fully incorporated.

  4. Pour the dry ingredients into the wet ingredients and mix in until just combined and no more dry ingredients show.

  5. Fold in sprinkles, reserving about 2 Tablespoons for the top.

  6. Spray a loaf pan with cooking spray and pour in batter, smoothing the top.

  7. Bake at 350F for about 55-65 minutes, or until a toothpick inserted in the middle comes out clean. Baking times will vary depending on oven, elevation, etc.

  8. If bread is browning to quickly on the top, tent with aluminum foil.

  9. Let bread rest in pan for about 5 minutes before removing it to a wire rack to cool completely.

  10. For the icing: mix cream cheese, 2 Tablespoons Greek yogurt, powdered sweetener and 1 tsp almond extract together until creamy.

  11. Frost fully cooled bread and top with remaining sprinkles.

  12. Enjoy!
