EASY Lightened Up Pumpkin Roll๐ŸŽƒ๐Ÿฆƒ

This Skinny version of Libby's Pumpkin Roll recipe, is lower in WW points and calories but still full of flavor! The pumpkin spice sponge cake is rolled together with a sweet cream cheese frosting, giving it a beautiful look that makes it look difficult to make but is is really quite easy! It makes a perfect dessert for Thanksgiving! Everyone will enjoy it and you don't have to feel guilty about eating dessert!

How to Make This:

Ingredients:

  • 3โ„4 cup All-purpose flour

  • 1โ„2 tsp Baking powder

  • โ„2 tsp Baking soda

  • 1 tsp Ground cinnamon

  • 1โ„2 tsp Ground cloves

  • 1โ„4 tsp Table salt

  • 3 large Egg

  • 3โ„4 cup Lakanto Classic Monkfruit Sweetener With Erythritol

  • 2โ„3 cup Libby's 100% Pure pumpkin

  • 8 oz Lucerne Light cream cheese

  • 2โ„3 cup Lakanto Monkfruit Sweetener, powdered

  • 2 Tbsp Plain fat free Greek yogurt

  • 1 tsp Vanilla extract

  • 1โ„4 cup, plus 1 Tbsp Powdered sugar (confectioner's)

  • Bakers Joy Baking Spray, with Flour

Instructions:

  1. Spray a 15 x 11-inch baking sheet with cooking spray (I use bakers Joy) line with parchment paper.

  2. Spray with bakers Joy or sprinkle with flour.

  3. In a medium bowl, add flour, baking powder, baking soda, cinnamon, cloves and salt and mix together well.

  4. In a mixer, add eggs and granulated sugar substitute and mix well.

  5. Mix in pumpkin until well combined.

  6. Mix in flour mixture until well combined.

  7. Spread evenly into prepared pan.

  8. Bake for 11 to 15 minutes or until top of cake springs back when lightly pressed.

  9. While cake is baking, prepare towel for it by sprinkling 1/4 cup powdered sugar on a thin, cotton kitchen towel (flour sack towel) roughly in the size of the baking sheet.

  10. Once cake is done, immediately turn cake onto prepared towel.

  11. Peel off paper.

  12. Slowly roll up cake and towel together, starting with narrow end.

  13. Place on wire rack and let cool completely. About an hour.

  14. For the filling, add cream cheese, powdered sugar substitute, Greek yogurt and vanilla extract to a mixer and mix until smooth and creamy.

  15. Carefully unroll cake.

  16. Spread cream cheese mixture evenly over cake, not going completely to the edges.

  17. Reroll cake, tightly but carefully.

  18. Wrap in plastic wrap and refrigerate at least one hour.

  19. Sprinkle with 1 Tbsp powdered sugar.

  20. Enjoy!
