Skinny Cinnamon Swirl Banana Bread🍌

This Fall Inspired banana bread recipe combines a sweet and moist banana bread with a buttery, sweet, cinnamon swirl! It is so delicious you would never know it was a lightened up recipe!

How to Make This:

Ingredients:

  • 3 medium Bananas, or about 1 cup mashed

  • 1⁄2 cup Plain fat free Greek yogurt

  • 1 large Egg

  • 1 tsp Coconut oil

  • 1 tsp Vanilla extract

  • Monk fruit sweetener with erythritol- 1/2 cup for batter, 1 1/2 Tbsp for cinnamon swirl

  • 1 cup All-purpose flour

  • 1⁄2 tsp Table salt

  • 1⁄2 tsp Baking powder

  • 1 tsp Baking soda

  • 1 1⁄2 Tbsp Lakanto golden monkfruit sweetener with erythritol

  • 2 Tbsp Brummel & Brown Spread Made with Yogurt

  • 1 Tbsp Ground cinnamon

Instructions:

  1. In a medium bowl, mash bananas.

  2. Add egg, Greek yogurt, oil, 1/2 cup monk fruit sweeter and vanilla and whisk together well.

  3. In a large bowl, add flour, salt, baking powder and baking soda and stir until well combined.

  4. Fold into banana mixture until incorporated.

  5. For the cinnamon swirl, stir your cinnamon, remaining 1 1/2 Tbsp of monkfruit and brown monkfruit together well.

  6. Add melted butter spread and stir until thick and well combined.

  7. In a 9 X5 loaf pan prepared with cooking spray, Spread 1/2 of the banana bread batter evenly on the bottom of the pan.

  8. Dollop 1/2 of the cinnamon swirl mixture over the batter in the pan and then make a swirl through the batter with the back of a spoon or a table knife.

  9. Cover with the remaining batter evenly.

  10. Dollop the remaining cinnamon swirl mixture and make swirls through the batter again.

  11. Bake at 350F for 40-50 minutes or until golden brown and a toothpick inserted in the center comes out clean. Baking times will vary depending on oven, elevation, etc.

  12. Enjoy!
