EASY NO BAKE 3 Ingredient Lemon Cookies🍋🍪
If you love lemon, you will love this easy no bake, 3 ingredient cookies! It uses Fresh lemons for a tart and sweet taste that is perfect for summer or anytime you want!
How to Make This:
Ingredients:
1 large lemon to get:
2 Tbsp juice and 1 Tbsp zest- 2 tsp for cookies, 1 to garnish
1/2 cup, Rolled oats
164 grams (about a cup) Lily's white chocolate baking chips
Instructions:
Add chocolate chips to a medium microwave-safe mixing bowl.
Heat chocolate in 15-30 second intervals, stirring in between with a spatula until chocolate is completely melted and smooth. It took mine 1 minute total at 15 second intervals.
Add in lemon juice and whisk until lemon juice is fully incorporated and mixture becomes uniform in color and smooth.
Stir in the zest and oatmeal until they are evenly mixed in.
Line a cookie sheet with parchment paper and drop batter by 1 Tbsp amounts on cookie sheet.
Use the back of a measuring cup to flatten cookies if desired.
Cookies will not change shape so shape them as you would like your final cookies to be.
Garnish top of cookies with additional zest.
Place cookies into fridge to set for about one hour.
