Skinny Spiced Apple Cake with Cream Cheese Frosting🍎

This lightened up spiced apple cake with cream cheese frosting is a delicious, moist cake, full of flavors with the apple and Fall spices. It's topped with a light cream cheese frosting that pairs perfectly and makes it a great cake for fall!

How to Make This:

Ingredients:

  • 2 1⁄4 cup All-purpose flour

  • 1⁄2 tsp Baking soda

  • 2 tsp Baking powder

  • 1⁄2 tsp Table salt

  • 2 1⁄2 tsp Apple pie spice(Homemade Apple Spice Recipe)

  • 3 large Egg Vanilla extract, 2 1⁄2 tsp, 2 for cake, 1/2 for frosting

  • 1 Tbsp Coconut oil (or oil of choice)

  • Plain fat free Greek yogurt, 1 cup, Plus a Tbsp for frosting

  • 2 containers, or 1 cup Mott's Natural applesauce (unsweetened)

  • 1 medium Apple, finely chopped

  • 4 oz Lucerne Neufchatel cheese

  • 1⁄4 cup Lakanto Monkfruit Sweetener, powdered

  • 1⁄3 cup Lakanto Golden monkfruit sweetener with erythritol

  • 1⁄2 cup Monk fruit sweetener with erythritol

  • 1⁄3 cup Chopped pecans

Instructions:

  1. Dice your apple into small pieces. You can either peel it first or leave the skin on.

  2. In a medium bowl whisk together the flour, baking soda, baking powder, salt, and apple pie spice.

  3. In a mixer or another bowl, add in the oil, sweeteners, eggs and vanilla, applesauce and Greek yogurt. Mix until well combined.

  4. Pour in dry ingredients and fold in until you no longer see any dry ingredients. Don't overmix.

  5. Fold in chopped apples.

  6. Pour into the prepared 9X13 pan and spread out evenly.

  7. Bake at 350F for 30-35 minutes or until the center bounces back when pressed on or an inserted toothpick comes out clean. Baking times will vary depending on oven, elevation, etc.

  8. For the Cream Cheese Frosting In a large bowl beat together the cream cheese, Tbsp Greek yogurt, powdered sweetener and 1/2 tsp vanilla until no lumps remain.

  9. Frost the cooled cake, then top with chopped pecans.

  10. Store leftovers in an airtight container in the fridge for 4-5 days.

  11. Enjoy!
