Skinny Apple Pie Pudding Cookies 🍏🍎

These easy apple cookie's soft and chewy texture comes from the Pudding mix in them! The combination of fresh apple and fall spices give them a taste like apple pie in a cookie form!

How to Make This:

Ingredients:

  • 1 1⁄4 cup All-purpose flour

  • 1⁄2 tsp Baking soda

  • 1⁄2 tsp Baking powder

  • 1⁄2 tsp Table salt

  • Apple pie spice, 2 1⁄2 tsp - 1 tsp for dough - 1 1/2 tsp to roll the dough(or cinnamon) (Homemade Apple Spice Recipe)

  • 1⁄3 cup Lakanto Monkfruit sweetener with erythritol, golden(or no calorie brown sugar alternative of your choice)

  • 1⁄2 cup Unsweetened applesauce

  • 4 tbsp Brummel & Brown Spread Made with Yogurt, melted

  • 1 large Egg

  • 1 tsp Vanilla extract

  • 1 medium Apple, about 1 cup finely diced

  • 3 Tbsp Lakanto Classic Monkfruit Sweetener With Erythritol(or no calorie sugar alternative of your choice)

  • 1 1⁄3 oz Fat free sugar free instant vanilla pudding and pie filling mix

Instructions:

  1. In a medium sized bowl, add your flour, salt, baking soda, 1 tsp apple pie spice and pudding. Stir together until well combined.

  2. In a large bowl, add your melted butter spread, golden sweetener, applesauce, egg, and vanilla extract. Stir together well.

  3. Mix you dry ingredients into your wet until combined.

  4. Wash, peel and chop your apples into small pieces.

  5. Fold in apple pieces.

  6. Let dough chill in the refrigerator for a couple hours, this makes it easier to work with the dough.

  7. Stir together remaining apple pie spice and classic sweetener until combined.

  8. Scoop dough by about 2 Tbsp and roll into balls.

  9. Roll balls in spice mixture.

  10. Place on cookie sheet about 2 inches apart.

  11. Slightly press them down.

  12. Bake at 350F for 12-15 minutes or until slightly browned.

  13. Enjoy!
