Easy Air Fryer Pumpkin Fritters🧡🎃

These easy pumpkin fritters hit the spot if you are craving a fritter but don't want all the calories and points of a regular fritter. I made them in the air fryer but they can also be done in the oven.

How to Make This:

Ingredients:

  • 1 1⁄2 cups Self-rising flour

  • 1⁄3 cup Lakanto Monkfruit sweetener with erythritol, golden (or no calorie brown sweetener of choice)

  • 2 tsp Pumpkin pie spice (Homemade pumpkin Spice Recipe)

  • 1 large Egg

  • 1 cup Canned pumpkin puree

  • 1⁄2 cup Plain fat free Greek yogurt

  • 1 tsp Vanilla extract

  • 2 tsp Plain unsweetened almond milk(or water)

  • 4 Tbsp Powdered sugar (confectioner's)

  • 1⁄2 tsp Olive oil, to spray dough and air fryer

Instructions:

  1. In a medium sized bowl, mix together flour, pumpkin spice and Lakanto golden and stir well.

  2. In another bowl, mix egg, pumpkin, Greek yogurt and vanilla together until combined.

  3. Stir in dry ingredients until well incorporated. Dough will be very sticky.

  4. Divide dough into 6 equal parts.

  5. Spray your air fryer with a little olive oil and place the dough into the basket.

  6. Slightly press down each with a spatula or fork to flatten.

  7. Spray tops of dough with olive oil and air fry at 320 for about 9-12 minutes, flip and spray the other side with olive oil.

  8. Cook an additional 4-6 minutes. Cooking times may differ depending on your air fryer.

  9. Remove to a cooling rack.

  10. To make the glaze, whisk powdered sugar and almond milk (or water) together until well combined.

  11. Pour or brush on glaze.

  12. To bake: Bake at 375 for about 20-25 minutes, flipping halfway through and spraying each side with olive oil.

  13. Enjoy!
