Pumpkin Bundt Cake With Cream Cheese Icing🎃

This Pumpkin Cake is easy to make, low in points and absolutely delicious! It is a soft, moist cake with Fall spices and pumpkin, topped with a sweet cream cheese icing, making it a perfect dessert for Fall!

How to Make This:

Ingredients:

  • 2 1⁄2 cups All-purpose flour

  • 1 Tbsp Pumpkin pie spice- (Homemade pumpkin Spice Recipe)

  • 1 tsp Baking soda

  • 1 tsp Baking powder

  • 1⁄2 tsp Table salt

  • 2 1⁄2 tsp Vanilla extract- 2 for cake -1/2 for frosting

  • 3 large Eggs

  • 2 cups Canned pumpkin puree

  • 1 cup Plain fat free Greek yogurt

  • 1⁄4 cup Vegetable oil

  • 2⁄3 cup Lakanto Classic Monkfruit Sweetener With Erythritol(or no calorie sweetener of choice)

  • 1⁄2 cup Lakanto Monkfruit sweetener with erythritol, golden(or no calorie brown sweetener of choice)

  • 4 Tbsp Reduced fat whipped cream cheese

  • 4 Tbsp Lakanto Monkfruit Sweetener, powdered

  • 1 Tbsp, 1-3 tsp, depending on desired consistency Plain unsweetened almond milk

  • Bakers Joy Baking Spray, with Flour

Instructions:

  1. In a large bowl whisk together the flour, pumpkin pie spice, baking soda, baking powder, and salt.

  2. In a mixer or another bowl, beat together the oil, classic sweetener, brown sweetener, 2 tsp vanilla extract, eggs, Greek yogurt and pumpkin puree until well combined.

  3. Slowly add the flour mixture into the pumpkin mixture, about ½ of the total, and mix in.

  4. Slowly add remaining flour mixture until full incorporated.

  5. Pour the batter into your prepared Bundt pan and smooth.

  6. Bake in preheated oven at 350 for 60-70 minutes, or until an inserted toothpick comes out clean.

  7. Let the cake continue to sit in the pan for another 15-20 minutes and then remove to a cooling rack.

  8. For the frosting, add cream cheese, remaining vanilla, powdered sweetener and 1-3 tsp almond milk and whisk together.

  9. Once cake is cooled, drizzle over the cake.

  10. Enjoy!
