Pumpkin Pecan Crunch "Dump Cake"
This pumpkin dump cake is a super simple but delicious dessert that is perfect for Fall and Thanksgiving! It is like a pumpkin pie and cake in one!
How to Make This:
Ingredients:
1 box sugar free yellow cake mix
1 -15 oz can of pumpkin
1/4 cup reduced calorie margarine or butter spread, melted
1/2 cup sugar
1/2 cup of chopped pecans
1 egg
1 -12 oz fat free evaporated milk
1 Tbsp pumpkin pie spice
Instructions:
Mix together pumpkin, evaporated milk, sugar, eggs and spices until incorporated together.
Pour into prepare 9X13 pan.
Sprinkle with cake mix and gently press down into the pumpkin.
Sprinkle the pecans on top of the cake mix.
Pour melted butter over the top evenly.
Bake at 350 for 50-60 minutes or until top is browned slightly and toothpick inserted comes out clean.
I topped mine with a little bit of whipped cream and a sprinkle of pumpkin pie spice. The whipped cream is not factored into the points!
