Oatmeal Pineapple Carrot Cake with Cream Cheese Frosting

A healthier but still delicious carrot cake with cream cheese frosting! This one is perfect for spring or Easter!

How to Make This:

Ingredients:

  • Cake Ingredients:

  • 2 Lg Eggs

  • 1 1/4 cups finely grated carrot ( I think next time I would use 1 cup carrot and 1 small banana)

  • 20z can crushed pineapple, drained

  • 1 cup Plain fat free Greek yogurt( or fat free sour cream)

  • 1⁄3 cup Maple syrup (or brown sugar)

  • 1 1⁄4 cup All-purpose flour

  • 3⁄4 cup Quick cooking rolled oats

  • 2 tsp Coconut oil

  • 1 tsp vanilla

  • 1 tsp Baking soda

  • 1⁄2 tsp Baking powder

  • 3⁄4 tsp salt

  • 1 tsp Ground cinnamon

  • 1/2 tsp ground nutmeg

  • Frosting:

  • 4 oz 1/3 less fat cream cheese

  • 1⁄2 cup Confectioners' sugar

  • 1⁄8 cup Plain fat free Greek yogurt(you can use 1-2 Tbsp milk instead)

  • 1/2 tsp Vanilla extract

Instructions:

  1. Mix flour, oats, baking soda, baking powder, salt and cinnamon together well in a medium bowl, set aside.

  2. In a mixer or by hand, mix together eggs, carrots, pineapple, Greek yogurt, maple syrup, coconut oil, and vanilla until well incorporated.

  3. Mix dry ingredients into wet, by hand, don't overmix.

  4. Pour batter into prepared 9X13 inch baking dish and bake at 375 for 20-25 minutes or until toothpick inserted comes out clean.

  5. Let cake cool completely before frosting.

  6. To make the frosting, mix all frosting ingredients together until creamy. Frost cake once it is cooled.

  7. Enjoy!
