Lightened Up Strawberry Cheesecake Cream Pie🍓🥧

This lightened up strawberry cream pie is light, creamy and a perfect summer dessert!

How to Make This:

Ingredients:

  • 7 whole Reduced-fat graham crackers

  • 3 Tbsp Brummel & Brown Spread Made with Yogurt

  • 2 tsp Lakanto Classic Monkfruit Sweetener With Erythritol

  • 8 oz Neufchatel Cheese

  • 1 package (.30 oz) Jell-O Strawberry sugar free low calorie gelatin dessert

  • 1⁄2 cup Lakanto Sugar free powdered monkfruit sweetener with erythritol

  • 1 pound, sliced Strawberries

  • 12 oz (1 1/2 containers) Cool Whip Fat Free Whipped Topping

  • 1 tsp Fresh lemon juice

  • 1 tsp Vanilla extract

Instructions:

  1. To make the crust: Place graham crackers in a ziplock bag and crush with a rolling pin. You can also use a food processor if you want.

  2. Add graham cracker crumbs to a bowl along with 2 tsp sweetener and melted butter spread. Mix until well combined.

  3. Press crust mixture into the bottom of a pie pan.

  4. Cover the crust with sliced strawberries, reserving about 3/4 cup of the strawberries for topping, and place in refrigerator while you make the rest of the pie.

  5. In a mixer, add cream cheese, powdered monkfruit, lemon juice, and vanilla.

  6. Beat on medium to high speed until it is smooth and creamy.

  7. Gently fold 8 oz cool whip into the cream cheese mixture.

  8. Pour half of the filling onto the crust.

  9. Add jello into the remaining mixture and stir in until combined.

  10. Pour the strawberry filling over the cream cheese mixture and refrigerate for at least 4 hours or overnight.

  11. Once cooled, top with 4 oz of whipped topping and sprinkle whole pie or individual servings with chopped strawberries, or slices.

  12. Enjoy!
