These tasty lemon bars have a shortbread crust topped with a Greek yogurt lemon custard layer that's bursting with the flavor of fresh lemon! These are perfect for a spring or summer treat, or anytime!

How to Make This:

Ingredients:

  • Crust:

  • 1 cup all-purpose flour

  • ½ cup Lakanto powdered

  • ¼ teaspoon salt

  • 10 tablespoons(140g) light butter spread (I use Brummel and Brown)

  • Lemon filling:

  • 3 cups Fat Free Greek Yogurt

  • ¾ cup Lakanto Classic

  • 2 teaspoons cornstarch

  • 3 large eggs, at room temperature

  • Zest of 1 lemon (about 1 Tbsp)

  • 1/3 cup lemon juice

  • 1 teaspoon vanilla extract

  • ¼ teaspoon salt

Instructions:

  1. Preheat oven to 350-degrees Fahrenheit.

  2. Zest and juice your lemons. Set aside.

  3. For the crust: add to your mixer, flour, Lakanto powdered, salt, and butter spread and mix until a dough forms.

  4. Line a 8X8 inch baking dish with parchment paper.

  5. Transfer the dough to the pan and press the dough down into the bottom of the pan.

  6. Bake for 20-25 minutes or until golden brown on edges.

  7. For the filling: add to your mixer, Greek yogurt, Lakanto classic, and cornstarch and mix until combined.

  8. Next add the eggs, lemon zest, lemon juice, vanilla extract, and salt until smooth.

  9. Reduce the oven to 325-degrees Fahrenheit.

  10. Pour lemon mixture onto the baked crust and bake for 30-40 minutes, or until the filling is set. There will still be a slight jiggle in the center when it is done.

  11. Cool on a wire rack for 2 hours and then chill in the refrigerator for at least 3 hours to overnight before serving.

  12. Enjoy!
