EASY No-Bake Chocolate Peanut Butter Oat Cups🍫🥜🥣😋

These chewy, lightly sweet, No Bake Peanut Butter Oat Cups are the perfect healthy snack for when you have sweet craving. They are like a cross between a chocolate peanut butter cup and a granola bar. They make the perfect quick and easy healthy snack for peanut butter and chocolate lovers! They are also high protein and gluten free!

How to Make This:

Ingredients:

  • Oat Layer:

  • 1/2 cup (64g)Pbfit powder

  • ⅓ cup water

  • 1/4 cup Lakanto maple syrup

  • 1 tsp vanilla extract

  • 1 1/2 cups rolled oats

  • ¼ cup ground Flaxseed meal

  • 1 tsp cinnamon

  • ¼ tsp kosher salt

  • 1 scoop Protein powder (I use Isopure zero carb vanilla)

  • Chocolate Layer:

  • 4 oz (112g) Lilys chocolate chips

  • 1 tsp coconut oil

  • Flaky sea salt, optional

Instructions:

  1. In a medium bowl, stir together the peanut butter powder, water maple syrup and vanilla extract until well-combined.

  2. Stir in the oats, flaxseed, protein powder, cinnamon and salt until combined and a thick dough forms.

  3. Line a muffin tin with 12 muffin tin liners.

  4. Scoop about 2 Tablespoons of the oat mixture into each muffin liner.

  5. Use the back of a spoon to press it down firmly into an even layer.

  6. In a microwave safe bowl, add Lily’s chips and coconut oil. Microwave for 20-second increments, stirring between, until the chocolate chips have completely melted and are smooth.

  7. Spoon the melted chocolate mixture over the peanut butter layer (about 1 Tbsp each).

  8. Sprinkle the tops of chocolate layer with flakey sea salt.

  9. Freeze for 3-4 hours until completely firm before removing the cups from the pan. Then store them in the freezer or fridge in an air-tight container.

  10. Enjoy!
