Gingerbread Cookie Bars with Cream Cheese Frosting๐ซ๐ช๐๐ ๐
These soft and moist gingerbread cookie bars are full of delicious gingerbread spices and topped with a cream cheese frosting! They make the perfect holiday treat!
How to Make This:
Ingredients:
For the dough:
2 Cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1โ4 tsp Ground ginger
1 tsp Ground cinnamon
1โ4 tsp Ground cloves
ยผ tsp nutmeg
4 Tbsp (ยผ cup) brummel and brown
1/4 cup applesauce
ยฝ cup lakanto golden
1 teaspoon vanilla extract
3 Tablespoons molasses
1 egg
For the Frosting:
1/4 cup Lakanto Monkfruit Sweetener, powdered
1 Tbsp Plain fat free Greek yogurt
1/2 tsp Vanilla extract
4 oz Low fat cream cheese sprinkles
Instructions:
In a large bowl add flour, baking soda, cinnamon, ginger, nutmeg, cloves, and salt; set aside.
In the bowl of a stand mixer add butter spread, applesauce, lakanto golden, vanilla, and molasses and mix on medium speed until until combined. About 2-3 minutes.
Add and mix in egg until completely combined.
Pour in dry ingredients and mix slowly at first (to avoid making a mess!) then increase speed and mix until well combined.
Line a 9ร13-inch pan (quarter sheet) with parchment paper and spray top of parchment with cooking spray.
Spread dough evenly on pan.
Bake at 350F for 12-15minutes, until set and a toothpick inserted near the center comes out clean.
Cool completely before frosting.
For the Cream Cheese Frosting:
In a large bowl beat together the cream cheese, Tbsp Greek yogurt, powdered sweetener and 1/2 tsp vanilla until no lumps remain.
Frost the cookies when cooled.
