Gingerbread Cookie Bars with Cream Cheese Frosting๐Ÿซš๐Ÿช๐Ÿ˜‹๐ŸŽ…๐ŸŽ„

These soft and moist gingerbread cookie bars are full of delicious gingerbread spices and topped with a cream cheese frosting! They make the perfect holiday treat!

How to Make This:

Ingredients:

  • For the dough:

  • 2 Cups all-purpose flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 1โ„4 tsp Ground ginger

  • 1 tsp Ground cinnamon

  • 1โ„4 tsp Ground cloves

  • ยผ tsp nutmeg

  • 4 Tbsp (ยผ cup) brummel and brown

  • 1/4 cup applesauce

  • ยฝ cup lakanto golden

  • 1 teaspoon vanilla extract

  • 3 Tablespoons molasses

  • 1 egg

  • For the Frosting:

  • 1/4 cup Lakanto Monkfruit Sweetener, powdered

  • 1 Tbsp Plain fat free Greek yogurt

  • 1/2 tsp Vanilla extract

  • 4 oz Low fat cream cheese sprinkles

Instructions:

  1. In a large bowl add flour, baking soda, cinnamon, ginger, nutmeg, cloves, and salt; set aside.

  2. In the bowl of a stand mixer add butter spread, applesauce, lakanto golden, vanilla, and molasses and mix on medium speed until until combined. About 2-3 minutes.

  3. Add and mix in egg until completely combined.

  4. Pour in dry ingredients and mix slowly at first (to avoid making a mess!) then increase speed and mix until well combined.

  5. Line a 9ร—13-inch pan (quarter sheet) with parchment paper and spray top of parchment with cooking spray.

  6. Spread dough evenly on pan.

  7. Bake at 350F for 12-15minutes, until set and a toothpick inserted near the center comes out clean.

  8. Cool completely before frosting.

  9. For the Cream Cheese Frosting:

  10. In a large bowl beat together the cream cheese, Tbsp Greek yogurt, powdered sweetener and 1/2 tsp vanilla until no lumps remain.

  11. Frost the cookies when cooled.

  12. Enjoy!
