Skinny Cranberry Pretzel Salad🎄

This easy, delicious, lightened up cranberry pretzel salad is perfect for the Holidays or anytime!

How to Make This:

Ingredients:

  • 12 oz Fresh cranberries, washed and picked through

  • 1 cup Lakanto Classic Monkfruit Sweetener With Erythritol - 1/2 cup for cranberries, 1/2 cup for filling *plus 2 Tablespoons for crust

  • 1 cup Water

  • 1 package Jell-O Raspberry sugar free low calorie gelatin dessert, .6oz size. or 2 .3oz

  • 4 oz Pretzel, about 3 cups

  • 5 Tbsp Brummel & Brown Spread Made with Yogurt

  • 8 oz Cool Whip Fat Free Whipped Topping

  • 8 oz 1/3 less fat Neufchatel Cheese

Instructions:

  1. Roughly break up your pretzels, I did this by putting them in a ziplock bag and hitting them with a rolling pin but you could use a food processer also.

  2. Add melted butter spread and the 2 Tbsp of sweetener to pretzels and mix well.

  3. Press pretzel mixture in a 13X9 inch pan, bake at 350 for 10 minutes. Let cool for 1-2 hours.

  4. For the filling, mix together cream cheese and 1/2 cup sweetener until well combined.

  5. Fold in whipped topping.

  6. Spread mixture evenly over cooled pretzels, making sure to get it all the way to edges so jello wont seep down to the pretzels.

  7. Refrigerate while working on cranberry topping.

  8. In a medium pot, on medium/high heat, add the cranberries, 1/2 cup sweetener, and water.

  9. Stir until the sugar dissolves and the liquid comes to a simmer.

  10. Continue to cook, stirring occasionally, until the cranberries start to soften and burst, about 5 minutes.

  11. Remove from the heat and stir in the Jello packet until dissolved.

  12. Let sit about 10-15 minutes to cool slightly.

  13. Pour cranberry topping over cream cheese layer.

  14. Cover with plastic wrap and refrigerate until jello is set up, or overnight.

  15. Enjoy!
