EASY Protein Cookie Dough Bark Recipe πŸͺ🍫

This tasty protein cookie dough bark hits the spot when you are craving something sweet and chocolatey but don't want all the calories and points! It makes a great sweet treat or post workout snack!

How to Make This:

Ingredients:

  • Β½ cup oat flour (about 2/3 cup rolled oats)

  • 2 scoops (62g) protein powder (I use this brand Isopure Protein Powder, Creamy Vanilla

  • 2 Tbsp + Β½ teaspoon melted coconut oil

  • 2 Tablespoons Lakanto maple syrup

  • 2 Tbsp Pbfit powder plus 1 Β½ Tbsp water mixed together

  • Β½-1 Tablespoons water

  • 4 oz Lily's chips, divided

  • Flaky sea salt, optional

Instructions:

  1. Add the flour, protein powder, 2 Tbsp coconut oil, maple syrup and peanut butter to a medium mixing bowl. Stir to combine.

  2. Add water, 1 Tablespoon at a time, stirring the cookie dough each time until the cookie dough is sticking together well. You don't want it dry and crumbly, but you also don't want it too wet.

  3. Add 1 oz of chocolate chips to the dough and fold in.

  4. Line a small baking sheet with parchment paper and spread and press dough into a rectangular shape.

  5. Add remaining chocolate 3 oz chips with Β½ teaspoon coconut oil to a microwave-safe bowl and microwave in 15-second increments, stirring in between, until fully melted.

  6. Spread melted chocolate on top of the cookie dough in a thin layer.

  7. Sprinkle on a little flaky sea salt, if desired.

  8. Place in the freezer for the chocolate to set, 1 hour.

  9. Cut into pieces and. Store in an airtight container in the refrigerator or freezer.

  10. Enjoy!
